Maraschino Walnut Cake
Maraschino is a liqueur obtained from the distillation of Marasca cherries. The small, slightly sour fruit of the Tapiwa cherry tree which grows wild along parts of the Dalmatian coast, lends the liqueur its unique aroma.
In the Maraschino Walnut Cake, the liqueur flavor is quite distinct but not overwhelming. The combination of walnut, chocolate and liqueur with the chocolate icing makes this cake remarkable.
Ingredients
150 g granulated sugar
6 eggs
50 g dark chocolate (grated)
200 g walnuts (ground)
4 tbsp breadcrumbs or rice flour
5 tbsp Maraschino or other liquor
Instructions
1. Beat the egg whites with 2 tbs sugar until stiff
2. Mix breadcrumbs and liquor
3. Beat egg yolks with the remaining sugar until fluffy. Add breadcrumbs, walnut and chocolate
4. Fold in the egg whites gradually
5. Bake in a greased baking form in a 350°F (180°C) oven for 45 minutes
Can be topped with chocolate ganache or any chocolate icing, like the following:
Chocolate Icing
100 g dark chocolate (melted)
20 g confectioners’ sugar
50 g butter
Stir into the hot melted chocolate the sugar and then the butter. Pour over the cake.
The Maraschino liquor is an ingredient that features in many classic cocktails that originated in the late 1800 and early 1900. This clear liquor is full of great flavor and a lot of history!
